	Here is an easy and classic appetizer with a Cajun twist...
	>>>> Cheese Drops with Cajun Red Gravy <<<<
	-------- Ingredients for the Cheese Drops ----------
	2 lb.          Block of Mozzarella Cheese
	1Cup + 2 T.    Self Rising Flour
	1 Lg.         Egg
	1 Cup        Milk
	3 T.           Olive Oil
	1 t.            Garlic Salt
	1 t.            Cayenne Pepper
	1/4 t.         Black Pepper
	                 Colored 'Frill' Toothpicks
	++++++++++++++++ Process ++++++++++++++++
	Cut Mozzarella into 1 Inch, bite sized squares... Place in
	freezer and freeze.
	Meanwhile, Whisk batter together in a bowl, using above
	ingredients and set aside to reach room temp....
	Pre-heat a deep fryer (Fry Daddy) or deep skillet full of oil,
	to about 400 degrees.
	Remove frozen cheese squares from freezer and set
	aside. Using a scoop-spatula, scoop up cheese squares,
	about 5-6 at a time and dump into batter mixture. After
	fully coating, scoop them back up and put easily into fryer,
	quickly without draining too much...  BE CAREFUL not to
	splash yourself with the hot oil...
	Fry until golden brown then scoop out and place on paper
	toweling to drain...

	Ingredients
	1/4 Cup                 Olive Oil
	1/2 T.                    Garlic Powder
	2                           Bay leaves
	1/2 Cup                 Finely diced Onion
	1 1/2 Cup              Rich Chicken Stock
	(2) 8 oz. cans       Tomatoe sauce
	1/2 t.                      Cayenne
	1/2 t.                      Thyme
	1/2 t.                      Basil
	1/4 t.                      White pepper
	1/4 t.                      Black pepper
	1/4 t.                      Onion Salt
	1/4 t.                       Celery Salt
	1 T.                        Louisianna Hot Sauce
	2-3 T.                     Flour
	*********************** Process ************************
	Saute Onion in olive oil, adding in bay leaves and
	remaining spices until brown like, a roux.
	Add in warm/hot chicken stock, then add the tomatoe
	sauce and stir...
	Thicken to a gravy consistency by whisking in  the flour,
	slowly... Dont worry if you get small clumps...
	After reaching desired gravy like consistency, strain
	mixture through a fine mesh/china cap. Pour strained
	mixture back into pan over low heat and simmer.
	While simmering, add spices to desired taste, I usually
	add more Louisianna Hot Sauce for the added tomatoe
	flavor...
	Put a 'Frill' colored toothpick into each fried cheese drop
	and place them on a plate/platter.
	*** Serve this Cajun Red Gravy in a bowl on the side with
	the fried cheese drops....
	Serves 2-3
